Ever wonder what to do with all those leftover Easter chocolates? Yeah, me neither. But just in case the Easter bunny has been especially generous, why not take your Rice Krispie treats to the next level with some chocolaty mix-ins.

Which candies work well

For this recipe, keep those jelly beans and Peeps in your Easter basket. Instead, pull out the following:

  • Candy coated chocolates – M&Ms (plain, peanut butter, caramel, not the ones with nuts inside) or Cadbury Mini Eggs (not the large cream eggs)
  • Chocolate candy bars – Twix, Snickers, Milky Way, 3 Musketeers, etc.
  • Chocolate covered caramels – the recipe calls for Rolos but you could also use Caramellos, Riesens, or Werther’s soft chocolate covered caramels – you want something that will melt into the marshmallow mixture

Decorating

These snack treats don’t need much in the way of decorating. Half the candies are incorporated into the bars and half create the topping. You could add a drizzle of white chocolate to zhush things up but that’s just gilding the lily. If you enjoy the crunch of salt with your sweets, add a light sprinkling of sea salt to finish.

Not just for Easter

As you can see, except for the Mini Eggs, you can find these candies year-round. You don’t have to wait to see what the Easter bunny provides, just raid the local candy aisle and get creative.

Level-up your Rice Krispie Treat game by incorporating chocolate candies and bars. A fun way to enjoy those leftover Easter goodies…


Ingredients

4 tablespoons butter

10 ounces marshmallows (about 40)

1½ ounces Rolos (about 8), roughly chopped

¼ teaspoon salt

6 cups Rice Krispies cereal

1 cup candy coated chocolates (like plain M&Ms, peanut butter M&Ms, Cadbury Mini Eggs)

2 cups chopped chocolate candy bars (like Twix, Snickers, Milky Way, 3 Musketeers)

Sea salt, for garnish (optional)


Instructions

Prepare a 9″ x 13″ pan with cooking spray. Line the pan with parchment paper leaving an overhang on the long sides (this will help to lift the treats from the pan). Spray again with cooking spray. Set aside.

In a bowl, combine the chocolate candies and bars (not the Rolos). Set aside.

In large saucepan melt the butter over low heat. Add marshmallows and chopped Rolos, stirring constantly until completely melted. Mix in the salt. Remove from heat.

Add the Rice Krispies and half of the candy mixture. Stir until well coated.

Pour the mixture into the prepared pan. Spray your hand with cooking spray then evenly press the mixture into the pan. Top with the remaining candies and press lightly to stick. If desired, sprinkle with sea salt.

Set aside to cool and firm. Remove from the pan and cut into 24 bars.
