I love the combination of lemon and ginger – whether it’s in a comforting tea or in these cute desserts. These parfaits are easy to whip together using store-bought ginger cookies, instant lemon pudding zhushed up with crystalized ginger, and freshly whipped cream. No cooking is needed, just a little assembly time.

A few simple ingredients

You know I love Trader Joe’s products. I highlighted the Meyer Lemon Cookie Thins in another recipe, this time I’m using the Ginger Cookie Thins. If you don’t have a Trader Joe’s near you, then any other gingersnap-type cookie will do. The cookies, along with instant pudding, crystalized ginger, and heavy cream (with a little powdered sugar) are all you need.

Some assembly required

This dessert could be assembled as a single trifle but there’s something lovely about having individual desserts for each of your guests.

  • Start by selecting some pretty glasses or jars, about 6-8 ounce capacity – Oui yogurt jars or small mason jars are perfect
  • Layer the crushed ginger cookies, lemon pudding, and whipped cream
  • Top with a final layer of whipped cream then garnish with finely diced crystallized ginger, candied lemon zest, and a ginger cookie
  • Serve and enjoy

Description

These parfaits are a perfect melding of warming winter spices and bright lemony flavors. They are an easy and pretty addition to your table.


Ingredients

Scale

1 3.4-ounce box instant lemon pudding (8 tablespoons dry mix)

2 cups milk

2 cups heavy cream

2 tablespoons powdered sugar

¼ cup finely minced crystallized ginger

2 cup finely crushed Trader Joe’s Ginger Thins (or other ginger snap cookies)

8 4-ounce serving cups


Instructions

Prepare the pudding as directed using the dry mix and milk. Fold in the minced crystallized ginger. Set aside.

Whisk heavy cream to soft peaks. Add powdered sugar and whip for another 15-30 seconds to incorporate the sugar. Set aside.

Place about 2 tablespoons of crushed ginger cookies in each glass. Top with 2 tablespoons of the pudding mixture. Repeat to create two more layers.

Top each parfait with whipped cream. If making ahead of time, place glasses in the fridge until ready to serve.

Before serving, top with more minced crystallized ginger and crushed ginger cookies. Serve with more ginger cookies.
