2024 Edible Holiday Gifts – Part 1

This recipe is inspired by the Pioneer Woman’s recipe of the same name. As much as we love her recipes, her version was a bit too much – too much chocolate (yup, we said that) and too much sugar (yup, we said that too). But obviously, we were inspired by her recipe and if you find you need more of a sugar high, by all means, bump up the chocolate and sugar, it is the holidays after all.

This is a great recipe for holiday gift giving or for a holiday party munchy. It makes a lot, but is easy to double or triple, and it barely requires any cooking.

A few tips:

  • Pre-popped kettle corn can vary in crispness. The first time we made this, we used a brand that was tasty but not quite as crispy as we liked. In the end we like a version we buy at the farmer’s market – they make their kettle corn on the spot and it has the perfect crunch.
  • Find the biggest mixing bowl you have to coat the popcorn with the chocolate. The first time we made this, we tried mixing it on the sheet pan to avoid another bowl to wash. It didn’t work – we got popcorn all over the floor and the popcorn wasn’t as coated as we would have liked.
  • Use the add-ins and toppings that you like best. The great thing about this recipe is you can almost do no wrong. If it doesn’t have enough of the things you like, add more. Switch out the mini M&Ms for peanut M&Ms. Add a drizzle of milk chocolate. Add yogurt pretzels. This recipe is really a starting point. Go ahead and create your own signature holiday popcorn.
  • And along those lines, don’t limit yourself to the Christmas holidays. For example, substitute Reese’s pieces for the candy canes and mini M&Ms for a fun Halloween mix.

White Chocolate Peppermint Popcorn

Description

Looking for a sweet holiday snack with just a hint of salt? Look no further than this easy to assemble, easy to gift, and easy to eat holiday popcorn mix.


Ingredients

Scale

2 medium candy canes (about 2 ounces total)

8 ounces almond bark or white chocolate chips

1 tablespoon coconut oil

10 cups store-bought popped kettle corn (about 6 ounces)

¼ cup mini M&Ms

¼ cup holiday sprinkles


Instructions

Line a baking sheet with waxed paper. Set aside.

Place candy canes in a zip-top bag and crush into small chunks and crumbs. Set aside.

Place the almond bark or white chocolate chips and coconut oil into a microwave safe bowl. Microwave in 15-20 second intervals, stirring each time, until mixture is melted and smooth. Total time will depend on your microwave.

Place the kettle corn in a large bowl. Pour the white chocolate mixture over the popcorn and stir until evenly distributed. Transfer the popcorn to the prepared baking sheet in a single layer.

Evenly sprinkle the candy cane bits, mini M&Ms, and sprinkles over the popcorn.

Allow the popcorn to dry at room temperature until dry to the touch. Pack in gift bags or an air tight container.
