Mom’s Lemon Bars

It’s been many years since we lost our Mom. I think of her often and am glad that I have so many wonderful memories of her. Not surprisingly a fair number of memories are connected to food and the kitchen. As Mother’s Day approached I kept looking for the one recipe that truly represented my Mom. And to be honest, I couldn’t find just one, there were just too many. So I selected one and hope to share others with you in the future.

These lemon bars are simple, sweet and everyone loves them. I couldn’t think of a better way to introduce you to her. I remember friends specifically asking her to make them because they loved them so much.

As with so many of my Mom’s recipes, this one was written on an index card with no indication of where it originated. It could have been something she found in the newspaper or a magazine. It could have come from a friend, a co-worker, or someone from church. It’s been in her repertoire for as long as I can remember so with apologies to the original author, it’s now become hers.

What I like best about these lemon bars is it doesn’t require me to make a lemon curd. I’ve found that I don’t care for bottled lemon curd which means if I ever need some for a recipe, I have to make it myself. This recipe doesn’t require it and all told, can be made in about an hour (not including cooling time).

Mom’s Lemon Bars

Description

This is a recipe that was often requested. It features a buttery crust and creamy lemon filling.


Ingredients

Scale

For the crust

3/4 cup butter, cut into small pieces

2 tablespoons powdered sugar

2 tablespoons granulated sugar

2 cups flour

For the filling

4 eggs

2 cups granulated sugar

1/2 cup flour

1 teaspoon baking powder

1/4 cup freshly squeezed lemon juice

1/4 teaspoon vanilla

Zest from the lemon(s)

Pinch of salt

Powdered sugar to finish


Instructions

To make the crust

Preheat the oven to 350 degrees F.

Using the pastry cutter, mix the flour and sugars in a bowl just to incorporate. Cut in the butter until it’s broken down to small pebbles.

Press lightly into a 9″ x 13″ pan. Bake for 15 minutes.

To make the filling

Combine all the filling ingredients. The batter will be runny. Pour over the crust and bake for 25 to 30 minutes.

Allow the bars to cool completely. Sprinkle with powdered sugar and cut into bars or squares.
