Description

Feta, apricots, and walnuts are baked until the cheese is warm, soft, and spreadable. Served with pita chips, lavosh, or crackers, it makes a welcoming starter for any party.


Ingredients

1 8-ounce block of feta cheese (not crumbled feta)

1 cup chopped dried apricots

½ cup chopped walnuts

2 tablespoons honey plus more for drizzling

2 tablespoons olive oil plus more for drizzling

2 teaspoons chopped fresh rosemary

Crushed red pepper, to taste, optional

Salt and pepper, to taste


Instructions

Preheat oven to 375 degrees F.

Place the feta block in a small ovenproof dish.

In a small bowl, mix together the apricots, walnuts, honey, olive oil, and rosemary. Season with crushed red peppers (optional), salt, and pepper.

Sprinkle apricot-walnut mixture on and around the feta cheese then drizzle with olive oil.

Place the dish in the oven and bake for 20-25 minutes, until feta is soft and creamy. The nuts and fruit should be toasted. Carefully watch the dish in the last five minutes to prevent burning.

Remove the baked feta from the oven and drizzle with more olive oil and honey, if desired. Garnish with fresh rosemary and more chopped apricots, if desired. Serve warm with pita chips, lavosh, or crackers.
