The Perfect Chocolate Chip Cookies

Saveur's "The Perfect Chocolate Chip Cookie"

October 4, 2024

This cookie from Saveur was the winner of our taste-off. It’s no wonder Eater included it in its list of best cookie recipes. This recipe, based on Levain Bakery’s cookies, produces big, soft, sharable cookies (that some tasters chose to keep all to themselves).

What we liked

  • This was the easiest dough to pull together
  • It did not require browned butter
  • The dough was portioned out before refrigerating

What we didn’t like

Nothing was wrong with the recipe per se. However, the bake time in the original recipe was way too short (15 minutes). We ended up baking the cookies for 22 minutes (timing may depend on your oven).

Would we change anything?

Because of the size of these cookies, it’s nice to use a mix of chocolate chips and chocolate chunks (or chopped chocolate). We also tried making them with a mixture of chocolates – milk, semisweet, and dark – which adds a nice variation to the cookies.

Would we make them again?

Absolutely. It was a favorite with our taste testers.

The Perfect Chocolate Chip Cookies

  • Yield: 20 1x

Description

These large, sharable, soft chocolate chip cookies were developed in the Saveur test kitchen based on Levain Bakery’s famous cookies.

Ingredients

Scale

4¼ cups flour

2 teaspoons baking soda

1 teaspoon kosher salt

1½ cups unsalted butter, softened

1¼ cups granulated sugar

1¼ cups packed light brown sugar

3 eggs

2 teaspoons vanilla extract

2 12-ounce bags semisweet chocolate chips**

Instructions

Whisk together flour, baking soda, and salt in a bowl; set aside.

In a large bowl, beat butter and sugars on medium speed of a hand mixer until fluffy, about 3 minutes.

Add eggs one at a time, beating well after each addition until smooth; beat in vanilla.

Add dry ingredients and beat until just combined; stir in chocolate chips.

Roll cookies into about 20 4-ounce balls and place on a parchment paper-lined baking sheet about 4-inches apart. Refrigerate for 2 hours.

Heat oven to 350°. Bake cookies, rotating pans halfway through, about 20-22 minutes*. Cool before serving.

Notes

*You can also use a mix of different types of chocolate (milk, semisweet, or dark) and a combination of chocolate chips and chunks.

**The original recipe stated 15 minutes.
