I’m always looking for new recipes and new ideas, not necessarily to share on the blog but because I like trying new things. This is how I came across Pati Jinich’s recipe for Mexican French Toast Rolls.
Why we like them
Traditionally I don’t love french toast but there was something about these simple rolls that spoke to me. The rolls are stuffed, in this case, with Nutella but you can use any of your favorite fillings – peanut or almond butter, jam or jelly, or cajeta – the choice is yours. The bread is stuffed with your favorite filling, rolled into a cigar shape, dipped in an egg custard mixture, and pan fried. The best part is when you remove the rolls, you immediately roll them in cinnamon sugar, just like a churro. Delicious.
The rolls are also easy to make, not much more work than a regular french toast. In this case we used Portuguese sweet bread that we get from a local bakery but white, wheat, or brioche bread works just as well.
And finally, even my nephew likes them (and that’s a tough endorsement to get).
To serve
Serve the rolls immediately. No additional garnish is needed. But if you want to gild the lily, so to speak, and ensure a sugar high, serve with maple syrup on the side for dipping.

Description
Based on a recipe from Pati Jinich these French Toast rolls are filled with Nutella, pan fried, and tossed in cinnamon-sugar. They are an fun and tasty way to start the day.
Ingredients
8 slices sweet bread or sandwich bread*
16 teaspoons Nutella**
1 egg
½ cup milk
⅛ teaspoon vanilla extract
Pinch kosher or sea salt
2 tablespoon unsalted butter, for frying
½ cup granulated sugar
1 teaspoon ground cinnamon
Instructions
Trim the crusts from the bread slices.*** Flatten the slices slightly with a rolling pin (do not be afraid to press firmly). On one edge of each bread slice, add about 2 teaspoons of Nutella.
Roll the bread like a cigar, keeping the Nutella in the middle of the roll; set aside until you finish all of the slices.
In a bowl mix the egg, milk, vanilla, and salt, and whisk until well combined.
In another bowl, mix the sugar with the cinnamon. Set aside.
Set a skillet over medium heat. Once hot, add the butter.
Soak the bread rolls in the milk mixture until fully coated. Add them to the hot pan with the melted butter. Cook the rolls until they’re golden brown and fully cooked, flipping a few times as they cook to brown on all sides. Coat the rolls in the sugar and cinnamon mixture. Serve immediately.
Notes
*Day-old bread is good but if the bread is too dry, it will crack when forming the rolls
**Other filling options: cajeta, dulce de leche, almond or peanut butter, jam or jelly
***Pulse the crusts in a food processor to make fresh bread crumbs. Toast in a 350 degree F oven for 10 minutes or so, watching so they don’t burn, and use for desserts or to add a crunch to your favorite ice cream.
