Busy work days do not have to end up with takeout in front of the television – although it often happens in our home. After a quick stop at the supermarket, you can pull together this delicious soup in about 20 minutes.

A quick stop at the market

Assuming you have ingredients like carrots, chicken broth, pasta, and parmesan cheese in your fridge and pantry, make a quick stop for the remaining items and you will be ready to go. You will need:

  • A rotisserie chicken
  • Jarred pesto
  • Pre-washed baby spinach
  • Crusty loaf of bread to serve with the soup

And that’s it.

Bring it all together

First thing to do when you get home is get the chicken broth into a pot and heating on the stove. While the broth is heating up, peel and slice your carrot and shred the chicken breast.

Once the broth is boiling, it’s a matter of adding ingredients at the right time – carrot and pasta first; chicken, baby spinach, and pesto last – and in about 15 minutes you’ll have a tasty, satisfying dinner.

Description

This twist on the classic chicken noodle soup takes advantage of supermarket shortcuts for an easy weeknight meal.


Ingredients

Scale

6 cups low sodium chicken broth

1 carrot sliced into thin disks

½ cup orzo (or other small pasta like ditalini or stelline)

8 ounces baby spinach

2 cups shredded rotisserie chicken breast

2 tablespoon pesto, homemade or store-bought

Parmesan cheese, for serving


Instructions

In a large pot, bring the broth to a boil.

Add the sliced carrots and orzo and cook for 8 minutes.*

Add the baby spinach and shredded chicken. Allow to heat through, about 2 minutes. Stir in the pesto. Adjust for seasoning as needed.

Ladle into bowls and top with parmesan cheese. Serve with crusty bread.

*Depending on the brand and type of pasta used, you may need to adjust the time (see the package directions).
