Spiced Star Fruit Pickles

Description

These spiced, slightly sweet fruit pickles are delicious on their own or chopped into a relish for salads or sandwiches. This recipe can also be made with stone fruit like plums or some tropical fruit like pineapple.


Ingredients

Scale

3 firm star fruit sliced into ½” slices, about 2 cups

¼ cup apple cider vinegar

¾ cup water

¼ cup sugar

1½ teaspoons kosher salt

2 green cardomom pods, lightly smashed

1 3″ cinnamon stick

5 whole peppercorns

1” piece ginger, peeled and sliced into coins


Instructions

In a clean, pint-sized glass jar, pack the star fruit slices, cardamom pods, peppercorns, cinnamon stick, and ginger slices.

In a small saucepan, add the apple cider vinegar, sugar, and kosher salt. Bring to a boil and simmer until the sugar and salt are dissolved.

Pour the brine into the glass jar, completely submerging the fruit. Let cool, uncovered, on the countertop for 20 minutes.

Cover and refrigerate. Let sit overnight to allow flavors to soak into the star fruit.

Use within 4 weeks.
