Pork Tofu Loaf

Description

This savory Asian meatloaf makes a great main dish served with rice and veggies. It feeds a crowd and is perfect to take to a pot luck.


Ingredients

2 pounds firm tofu, drained

1½ pounds ground pork

1 cup chopped scallions

1 cup panko (or other dried, unseasoned bread crumbs)

1 8-ounce can water chestnuts, drained and chopped

4 large dried shiitake mushrooms, rehydrated and chopped

4 large eggs, scrambled

1 5.5-ounce block kamaboko

6 tablespoons soy sauce

3 tablespoons oyster sauce

2 teaspoons sesame oil

3 teaspoons sugar


Instructions

Preheat oven to 375 degrees F. Coat the insides of two 9″ x 5″ loaf pans with cooking spray (you can also use one 9″ x 13″ pan). Set aside.

In a large bowl, mash the drained tofu.

Add the remaining ingredients and mix until thoroughly combined.

Evenly divide the mixture between the two loaf pans. Press lightly.

Bake for 1 hour.
