Mom’s Chinese Chicken Salad

Description

 

This salad of crisp vegetables, savory proteins, and crunchy wonton strips is brought together with a sweet Asian vinaigrette – perfect for a potluck or for weekday meal prep.


Ingredients

For the salad:

1 small head iceberg lettuce, shredded (about 8 cups)

4 green onions, white and green parts, thinly sliced on the diagonal

4 stalks celery, thinly sliced on the diagonal

1 cup char siu, sliced in matchsticks

2 cups cooked chicken breast, shredded

1/2 bunch cilantro, roughly chopped, optional

For the dressing:

2 teaspoons salt

1 teaspoon pepper

6 tablespoons white vinegar

4 tablespoons sugar

1/2 cup vegetable oil

Garnishes:

2 cups packaged fried wonton strips*

Toasted sesame seeds

Cilantro (optional)


Instructions

In a large bowl, combine the salad ingredients.

In a small bowl or mason jar, combine the dressing ingredients, stirring or shaking until the sugar is dissolved.

Just before serving, pour the dressing over the salad and toss to combine. Arrange on a platter and top with wonton strips and sesame seeds.

Notes

*If you cannot find wonton strips (in the chips aisle of your local grocery) you can use fresh dumpling wrappers (wonton pi). Cut the wrappers into thin strips and deep fry until puffed and golden (should only take a few seconds per batch).
