Jalapeño and Cheese Beer Bread

Description

Experiment with the type of beer, cheese, and peppers – each will yield a different flavor. Modified from Epicurious’ Beer Batter Bread recipe.


Ingredients

2 cups all-purpose flour

1 cup whole wheat flour

1 tablespoon baking powder

3 tablespoons sugar

1 teaspoon salt

1 bottle (12 ounces) beer, room temperature

1 cup grated cheese, optional

1 jalapeño, diced, seeds removed, optional

3 tablespoons butter, melted


Instructions

Preheat the oven to 375° F. In a mixing bowl, combine all the dry ingredients, cheese, and jalapeño. Add the honey and then all of the beer, mixing as little as possible; the batter should be lumpy.

Brush the inside of a 9-x-5-x-3-inch loaf pan with some of the melted butter. Pour in the batter and brush the top with the remaining butter. Bake in the oven for 35 to 40 minutes, or until an inserted skewer comes out clean. Turn out onto a rack to cool.
