Dried Candied Star Fruit

Description

These candied dried fruit create whimsical shapes that are fun to decorate with and to eat. They can be chewy like gummy candies or crisp like chips.


Ingredients

Scale

6 medium to large star fruit

1 cup water

¾ cup sugar

1 inch piece of ginger peeled and sliced into thin coins

Cinnamon sugar or li hing powder


Instructions

Line baking sheets with parchment paper. Set aside.

Slice star fruit into thin slices, 1/4″ or thinner*

In a small saucepan, add the water, sugar, and ginger slices. Place over medium-high heat and bring to a boil. Simmer for a few minutes then remove from heat and set aside for 15 minutes to cool.

Preheat oven to 200 degrees F.

Place the star fruit slices in batches into the ginger sugar syrup and allow to steep for a few minutes.

Transfer the star fruit slices to the prepared baking sheets, allowing the excess syrup to drip off first.**

Bake the slices for 3 hours, checking every 30 minutes after the first hour. Remove from the oven when the slices reached the desired chewiness or crispness.

While warm, lightly sprinkle with cinnamon sugar or li hing powder, if desired.

Cool completely before storing in an airtight container. Use within a few days.

Notes

*Thicker slices will produce a chewier, fruit leather-like texture. Thinner slices produce crispier chips.

**Reserve the leftover syrup for cocktails or other drinks.
