Description
Cottage cheese is transformed when whipped into a smooth, creamy spread. Here are three different dips you can make with this versatile ingredient. No one will guess they may actually be good for them.
Ingredients
16 ounces full-fat cottage cheese
For the Chili Crisp Dip
1 tablespoon Trader Joe’s Crunchy Chili Onion Crunch (or your favorite chili crisp)
1 teaspoon honey
For the Green Goddess Dip
1 tablespoon Trader Joe’s Green Goddess Seasoning Blend
2 teaspoons olive oil, or to taste
For the Mediterranean Dukkah Dip
1 tablespoon Trader Joe’s Dukkah (or your favorite dukkah blend)
2 teaspoons olive oil, or to taste
Instructions
Place the cottage cheese in the bowl of a food processor. Process until smooth, about 1 minute.
Evenly separate the whipped cottage cheese into three bowls. Mix in the ingredients for each dip into one portion of whipped cottage cheese. Mix each dip well and transfer to a serving dish. Serve with crackers, toasts, or crudité. Or use as a spread for sandwiches.
Notes
Each of the dip mix-ins is for a third of the whipped cottage cheese. If you choose to make only one flavor of dip, triple the mix-in ingredients.
If you make the dips ahead and store them in the refrigerator, let them sit at room temperature for 10-15 minutes before serving to loosen up. If they are too thick, mix in a little olive (or chili) oil until you have the desired consistency.
