Description
Quindim (pronounced keen-deem) is a Brazilian baked dessert made with sugar, egg yolks and shredded coconut.
Ingredients
1 cup sugar
1 cup fresh grated coconut (if fresh is unavailable, use unsweetened flaked coconut)
1/3 cup coconut milk
8 egg yolks, beaten
2 tablespoon butter
1 teaspoon vanilla extract
Instructions
Preheat oven to 360 degrees F.
Blend all ingredients thoroughly in a bowl.
Pour into mini-muffin tins that have been greased and dusted with sugar.
Fill a big baking pan with about 1/2 inch of water and place the mini-muffin tin inside the pan. Bake in the water pan until flan is firm and golden brown (15 minutes).
Remove from oven, cool and remove from mini-muffin tin by running a knife around the edge. If they do not release immediately, chill first.
Can be placed in paper cups for serving.
