Description
This is a tasty alternative to fried chicken and is great served with a side of garlic mashed potatoes and green beans.
Ingredients
4 chicken thighs, bone-in, skin-on
For the cornflake coating
1/2 cup cornflake crumbs
1 teaspoon light seasoned salt
1/2 teaspoon each: paprika, sage, onion powder
1/4 teaspoon each: garlic powder, thyme, pepper
Instructions
For the cornflake coating
Combine all the coating ingredients in a Ziploc bag.
For the chicken
Preheat the oven to 400 degrees Fahrenheit.
Prepare a baking sheet by lining with foil and coating with nonstick cooking spray (makes clean up much easier).
Rinse the chicken in cold water then shake in the crumb mixture to coat. Place on the prepared baking sheet.
Bake uncovered for 35-45 minutes (longer if you’re using bone-in chicken). Check after 30 minutes and if the coating is getting too browned, cover the pan with foil for the last 15 minutes.
Notes
Recommend making a large batch of the cornflake coating and storing in an airtight container. Portion out the coating as you need it.
Method will work for other cuts of chicken – boneless, skinless thighs; bone-in chicken breasts; etc. Time in the oven will need to be adjusted. Bone-in will take longer than boneless. Skinless will be a little drier so you may want to drizzle the crumb coated chicken with a little olive oil before baking.
